Family Photos

1 tablespoon good olive oil
1 tablespoon minced garlic (2 cloves)
2 cups heavy cream
3 lemons
Kosher salt and freshly ground black pepper
1 bunch broccoli
1 pound dried fusilli pasta
1/2 pound baby arugula (or 2 bunches of common arugula, leaves cut in thirds)
1/2 cup freshly grated Parmesan
1 pint grape or cherry tomatoes, halved


Heat the olive oil in a medium saucepan over medium heat, add the garlic, and cook for 60 seconds. Add the cream, the zest from 2 lemons, the juice of 2 lemons, 2 teaspoons of salt, and 1 teaspoon of pepper. Bring to a boil, then lower the heat and simmer for 15 to 20 minutes, until it starts to thicken.
Meanwhile, cut the broccoli in florets and discard the stem. Cook the florets in a pot of boiling salted water for 3 to 5 minutes, until tender but still firm. Drain the broccoli and run under cold water to stop the cooking. Set aside.

Bring a large pot of water to a boil, add 1 tablespoon of salt and the pasta, and cook according to the directions on the package, about 12 minutes, stirring occasionally. Drain the pasta in a colander and place it back into the pot. Immediately add the cream mixture and cook it over medium-low heat for 3 minutes, until most of the sauce has been absorbed in the pasta. Pour the hot pasta into a large bowl, add the arugula, Parmesan, tomatoes, and cooked broccoli. Cut the last lemon in half lengthwise, slice it 1/4-inch thick crosswise, and add it to the pasta. Toss well, season to taste, and serve hot.

Happy Birthday to me

That's right, I am the big 32, although I still feel like I am 19, mentally that is. Physically, I feel like I should be collecting social security. LOL, but seriously, my body parts are giving out. My knees have been hurting for a while now and now my ankles are hurting and yesterday the top of my foot started hurting like someone stepped on it. Oh well!! I have had a fun weekend birthday anyways. On Saturday we got our new Oreck vaccuum!! I am so excited I already used it on Sunday and will probably use it again today. I love it!!! On Saturday night, Ben's parents took both of us to dinner. It was really good! We love and apprecite them so much. Sunday was a day of rest...for awhile that is. Around 1pm then some of Ben's brother and sisters came over for a movie marathon. The Bourne Identity trillogy. It was great. Rebecca made the most wonderful pasta ever. I just had some. I need to get the receipe and post it. My parents came over later that night and we had cake and stuff. It was nothing formal but it was fun. I got a call from Ronda, my friend, that I have not talked to in quite awhile and it was a pleasant suprise. I will be having lunch with another friend of mine on Wednesday. I guess people do read my blog. Rebecca and Sara gave me serving spoons, a gravey boat and a big white bowl. Later that night my friend Maelyn gave me some wooden spoons and whoppers. She is so nice and thoughtful. Debby gave me a beautiful Heart necklace. I just love her. Anywho, it was a really good weekend.

LOST AND FOUND???


Samantha has lost her tooth but it has not been found.


She was eating lunch at school and when she went to take a drink of her milk, which was in a thermos, her tooth was gone. She doesn't know what happened.

We think she swallowed it but the evidence is gone, or is it? hmmm...




Rain, Rain, GO AWAY!! Seriously, when is it just going to be warm and sunny?


Samantha went on her field trip today to Thankgiving Point @ the farm. She had a lot of fun but it was a rather blustery there as well.

Apparently the highlight for the kids was when they saw a bull and cow. The cow was bigger and had bathroom issues. EEWWWEEE!!
Goats, duck, donkies, llamma???? They all had fun..
BTW... IT IS NOW SNOWING.....

Girlfriend?



Jacob has made an announcement. He has a girlfriend. Sheyenne. I asked if he asked her to be his girlfriend and with a shy response said no that she announced that he would be her boyfriend. Apparently in circle time she leans her head on his shoulder.

Seriously, I find it very cute and funny and sad that he is growing up.

Isn't he cute? I love him soooooo much and just wish he would stay a little boy forever!!!

Vaccuum

I am so excited for my birthday. Ben asked if I wanted to go out to dinner and wondered what I would like. I said YES, but not really to dinner just to get something. Now don't think I am silly but what I would really love for my b-day or any day really is a vaccuum. Wierd I know but ours is on the fritz and I am done with it!! I really would love an Oreck. They are awesome!!!! 8 lbs and awesome suctions plus they have a bag, which I find more cleaner than a canister. I have been borrowing my mothers and was sad to see it leave Sunday. Tears were quietly shed. Hope I get it, we will see
Boy am I horrible at this. I have not written for quite awhile. Well this is whats been going down...

Easter Sunday..Samantha looked fabulous in her dress (I promise to post picture soon - again horrible bloggin) Her and Jacob stayed over at Grandma Phillips' house and went to church with them on Sunday then came home to go to church again with me. I know I am mean but I know that Samantha just loved it.
The Schmalz' came over for Easter Dinner. I was at church so Sharon said that she would cook and all that good stuff. By the way I really need more cooking utensils and serving dishes, etc. Anywho, it was good and I was happy to provide the house for dinner.

Zach was blessed on Sunday by my dad and what a great dad/grandpa he is. I really appreciate all he does for our family and am blessed with great parents. I now know he didn't feel good yet still gave a wonderful blessing to his grandson. Alex, his other grandpa, gave a touching testimony in church as well. Ben and I just love him.. He is wonderful. I do have to write and not to embarass but he said something like "many of you know my son Alex". Which I am sure one or two families might but highly doubtful since Alex/Xandi is in a different ward altogether. Oh well, I don't think many people know Ben so it was probably just cute to me. What would have been even funnier is if he said Alex and Stacy, then there would have been more confusion all around. All in all, it was a good day. Afterwards we had dinner at our home with sandwiches and potato salad and whatnot. Ben thought we should have just had dessert but who knows. My mother confirmed that I really do need the utensil/serving dishes. She is calling for a kitchen party to get me supplied. I have to agree.. not the party but the utensils. Maybe my next "party" I will be supplied with all the serving and cooking untensils one could ever have........til then...
